In this course you will gain and apply a broad range of skills and knowledge to work in a bar including hygiene requirements, setting up a bar for service, preparing and serving beverages, customer service and understanding the regulations and responsibilities associated with serving alcoholic beverages.

Responsible Service of Alcohol (RSA)

This skill set is for workers involved in the sale, service, promotional service, delivery, and supply of alcohol to customers. It also applies to the licensee who is ultimately responsible for managing the responsible service of alcohol.

This skill set is a short course that is designed for people who want to gain or upskill their customer service skills and knowledge. Food Safety Supervision Skill Set

This course will provide you with supervisory skills and knowledge required to handle food safely during the storage, preparation, display, service and disposal of food.

This course meets the Territories' requirements for each establishment to have a designated food safety supervisor who is required to be certified as competent in this qualification through a registered training organisation

The course consists of 2 units:

  • COOK283 SITXFSA006 Participate in safe food handling practices

Important: ɬÀï·¬does not issue NSW Food Authority - NSW Food Safety Supervisor Certificates.

Produce Cakes

Produce cakes unit describes the performance outcomes, skills and knowledge required to produce cakes and sponges following standard recipes. It requires the ability to select, prepare and portion ingredients and to use equipment and a range of cookery methods to make and decorate cakes and sponges.

Produce specialised cakes unit describes the performance outcomes, skills and knowledge required to use standard recipes to produce specialised cakes that require finish, decoration and presentation of a high order. It requires the ability to select, prepare and portion ingredients, and to use equipment and a range of cookery methods to make, fill, assemble and decorate specialised cakes.

You will need to apply for the Certificate III in Patisserie qualification to enable you to enrol into these 3 subjects;

  • SITXFSA005 COOK282 Use hygienic practices for food safety
  • SITHPAT011 BAKE 196 Produce cakes
  • SITHPAT012 BAKE 197 Produce specialised cakes

Please note: ‘Use hygienic practices for food safety’ is a prerequisite subject

Prepare and Serve Espresso Coffee

This unit describes the performance outcomes, skills and knowledge required to extract and serve espresso coffee beverages using commercial espresso machines and grinders. It requires the ability to advise customers on coffee beverages, select and grind coffee beans, prepare and assess espresso coffee beverages and to use, maintain and clean espresso machines and grinders.

You will need to apply for the Certificate III in Hospitality qualification to enable you to enrol into these 2 subjects;
